Basil Pesto Pork Tenderloin W/ Veggies

This one-pan pesto pork tenderloin with roasted potatoes and green beans is a flavorful, easy-to-make meal perfect for busy weeknights. With minimal prep and a quick bake in the oven, you can serve a healthy and satisfying dinner for the whole family.

Ingredients
  

  • 1 pork tenderloin
  • 5-6 potatoes peeled and chopped
  • 1-2 lbs frozen green beans
  • 1/2 cup basil pesto
  • Olive oil spray
  • Salt to taste
  • Pepper to taste
  • Italian seasoning to taste
  • Butter optional, for serving

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Arrange the pork tenderloin in the center of a large sheet pan.
  • Place the chopped potatoes and frozen green beans around the pork on the sheet pan.
  • Spray the vegetables with olive oil spray to coat them lightly.
  • Season the vegetables with salt, pepper, and Italian seasoning to your preference.
  • Spread the basil pesto evenly over the pork tenderloin.
  • Place the sheet pan in the oven and bake for 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C) and the vegetables are tender and golden.
  • (Optional) Add small pats of butter on top of the vegetables during the last 5 minutes of baking for extra flavor.
  • Remove from the oven and let it rest for a few minutes before slicing the pork.
  • Serve warm and enjoy!
