Creamy Turkey + Wild Rice Soup

Creamy Turkey + Wild Rice Soup

A delicious gluten free, dairy free soup, perfect for all of those turkey leftovers!

Ingredients
  

  • 2 cups shredded turkey
  • 1 tbsp olive oil
  • 2 cups diced onion, carrots, celery
  • 3 cloves garlic (minced)
  • 3 tbsp GF flour
  • 8 cups turkey broth
  • 1 cup wild rice
  • 1 can coconut cream
  • salt, pepper, rosemary to taste

Instructions
 

  • In a large dutch oven or stock pot, add olive oil, onion, carrots, celery, and garlic, and sauté for 5-7 mins. (Until softened and fragrant.)
  • Add flour and whisk constantly for 2 minutes.
  • Add turkey broth and bring mixture to a boil.
  • Add in wild rice, and reduce to a simmer. Allow to cook for 20-25 minutes until rice is cooked through.
  • Stir in shredded turkey, and stir in coconut cream.
  • Let simmer until ready to serve, add salt, pepper, and herbs to taste. (rosemary and parsley are great pairings) ENJOY!
