Creamy Turkey + Wild Rice Soup
A delicious gluten free, dairy free soup, perfect for all of those turkey leftovers!

shredded turkey

tbsp
olive oil

diced onion, carrots, celery

cloves
garlic (minced)

tbsp
GF flour

turkey broth
1
cup
wild rice
1
can
coconut cream
salt, pepper, rosemary to taste
Instructions
In a large dutch oven or stock pot, add olive oil, onion, carrots, celery, and garlic, and sauté for 5-7 mins. (Until softened and fragrant.)
Add flour and whisk constantly for 2 minutes.
Add turkey broth and bring mixture to a boil.
Add in wild rice, and reduce to a simmer. Allow to cook for 20-25 minutes until rice is cooked through.
Stir in shredded turkey, and stir in coconut cream.
Let simmer until ready to serve, add salt, pepper, and herbs to taste. (rosemary and parsley are great pairings) ENJOY!
