Creamy Chicken Gnocchi Soup
Hi my friends! It’s a new week, and I have a new recipe to share with you! My sister created this recipe for a Creamy Chicken Gnocchi soup, and it’s PHENOMENAL. The recipe is completely gluten free, dairy free, and easy to throw together on a weeknight. Try it out, and let me know what you think!
A few notes: I found all of my ingredients at Trader Joe’s, however you can probably find them at whatever grocery store you like to shop! If you are a Faster Way client, this is a great LOW CARB day soup, because the coconut cream gives it a lot of healthy fat. To make this work for a regular macro day, I would half the amount of coconut cream that you add in. If you are tracking in MFP, I have preloaded this soup for you! Just search “Creamy Chicken Gnocchi Soup TS Health & Wellness” I have also added the “half fat” option as well, if you make the recipe with half coconut cream, to make things easy for you!
Creamy Chicken Gnocchi Soup
Ingredients
- 1 rotisserie chicken
- 1 tbsp olive oil
- 1 small onion (diced)
- 5 large carrots (chopped)
- 2 celery stalks (chopped)
- 3 cloves garlic (minced)
- 2 tbsp butter (or ghee for DF)
- 2 tbsp GF flour
- 8 cups chicken broth
- 1 16 oz bag cauliflower gnocchi
- 2 cups frozen spinach
- 1 can coconut cream
- salt + pepper to taste
Instructions
- In a large dutch oven or stock pot, add olive oil, onion, carrots, celery, and garlic, and sauté for 5-7 mins. (Until softened and fragrant.)
- Add your butter or ghee to mixture, and stir to combine.
- Next, add flour and stir constantly for 2 minutes.
- Add chicken broth and bring mixture to a boil.
- Add in frozen spinach and gnocchi and continue to boil until gnocchi cooks and floats to top. (Usually about 5 to 6 minutes.)
- Reduce heat to a simmer, stir in shredded chicken, and stir in coconut cream.
- Let simmer until ready to serve, add salt and pepper to taste. ENJOY!
