Creamy Chicken Gnocchi Soup

rotisserie chicken

olive oil

small onion (diced)

large carrots (chopped)
2
celery stalks (chopped)

cloves
garlic (minced)

butter (or ghee for DF)

GF flour

cups
chicken broth
1
16 oz bag
cauliflower gnocchi

cups
frozen spinach
1
can
coconut cream
salt + pepper to taste
Instructions
In a large dutch oven or stock pot, add olive oil, onion, carrots, celery, and garlic, and sauté for 5-7 mins. (Until softened and fragrant.)
Add your butter or ghee to mixture, and stir to combine.
Next, add flour and stir constantly for 2 minutes.
Add chicken broth and bring mixture to a boil.
Add in frozen spinach and gnocchi and continue to boil until gnocchi cooks and floats to top. (Usually about 5 to 6 minutes.)
Reduce heat to a simmer, stir in shredded chicken, and stir in coconut cream.
Let simmer until ready to serve, add salt and pepper to taste. ENJOY!
