Sweet Summer Time

Summer is HERE friends! I am so thrilled to have a break from the norm, and a chance to slow down a bit with the kids and enjoy our time off together. Our calendar is definitely still pretty full, because the Schoenfeldt’s don’t slow down TOO much. But, the full calendar is all fun, so I am here for it! We kicked off our summer break with a trip in the RV to the Texas hill country. The first part of our trip we spent in Boerne, and the second part was at the Frio river. More on the Boerne trip in another post, but for now, here are some pics from our trip to the river. We absolutely love this river and visit every summer for a week long. This trip was spontaneous and just for one night, so we can’t wait to go back for our full trip.

I am so grateful for our time away with the kids & to make memories in our RV! Lots of you voted in my stories last week that you would like to see more RV related content, so stay tuned for some more on that! 🙂 Now, let’s plan dinner for this week!

Monday: today feels like Monday, haha, but she gone. Hope you enjoyed whatever you ate. HA.

Tuesday: bacon wrapped chicken & veggies *YUM. Anything with bacon added is a win in our family’s book. Great for a low carb dinner! (recipe)

Wednesday: tomato basil soup + grilled sandwiches *shared this family fave recipe on the blog not too long ago! (recipe)

Thursday: steak kabobs + veggies *an easy dinner to cook outside! I’ve linked a great recipe, the only sub I make is coconut aminos instead of soy sauce. (recipe)

Friday: pulled pork sliders + cole slaw *I am linking an easy crockpot recipe for the pulled pork. If you have a pellet smoker, that tastes delicious too, you just need to allow for the proper time to cook it! (recipe)
