Spring At Magnolia + Dallas Getaway

Over the weekend the hubs and I celebrated our 14th wedding anniversary. 16 years together – almost half my life! And we still love each other! Haha. We were able to get away for the weekend with a trip to Dallas, TX for our live Faster Way leg day get together. Along the way we also made a pit stop at Magnolia in Waco. Y’all spring is my favorite, and spring at Magnolia did NOT disappoint!

I have no words for how gorgeous all the tulips & spring plants were here. I’ll just leave these pictures for you to enjoy! This is the first time we’ve been to Magnolia since they expanded the area by the old church. We watched the episodes of them building the church, and the individual little shops, so it was neat to see them “IRL”!

Once we reached Dallas, we relaxed a bit at our hotel, and then went out for a nice dinner to III Forks. It was incredible! Such great atmosphere, and service, and we left MISERABLE from all the food we ate. 😅

The MAIN event of the weekend! My husband is such a good sport about attending events with me, and he is SO supportive of my job. I loved the fact that he got to meet some of my friends & co-coaches, and the amazing mentors that I get to work alongside! The turnout was amazing for our event, and always leaves me feeling SO grateful that I get to work for such an amazing company.

Spring sports are in FULL swing! We’ve got a busy schedule with baseball and cheer tryouts happening this week, so my dinner’s need to be as hands off, quick, and easy to make as possible. By batch cooking some of my protein, I’ll be able to get a few meals out of one meat. Which is a win when you need it to be done quickly! Monday: chicken fajita bowls * I love a good Chipotle style bowl! Throw in some cilantro rice, beans, and top with fajita meat + all your fave toppings. Make it kid friendly by serving theirs on tortillas! Make it sports night friendly by cooking your chicken in the slow cooker! (recipe)

Tuesday: chicken pesto stuffed sweet potatoes * Repurpose your chicken from Monday night, and shred it up to use in these delicious stuffed potatoes! Bake the potatoes ahead of time, or cook them in your instant pot for quick and easy prep! Use a jarred pesto sauce to make it quick, or check out this recipe from my fave paleo blogger.

Wednesday: pulled pork sliders with cole slaw *this is a great slow cooker recipe that you can start early in the day, then throw together in 5 minutes at dinner time! (This is also a great meal to pack if you want to take with you to the field!) (recipe)

Thursday: pulled pork taquitos * Again, let’s repurpose that meat from the night before and make something new out of it! Taquitos baked in the oven or air fryer are quick, easy, and kid friendly. Serve with guac or sour cream, and a salad or beans to round out the meal! (recipe)

Friday: baked ziti casserole *This is a recipe that you can make entirely ahead of time, save in the fridge, and then pop in the oven when you are ready to heat and eat! (recipe)

being busy is a part of life, not an excuse

Don’t let the excuse of a “busy season” get in the way of prioritizing your health and fitness. It takes just as much time and money to make an unhealthy choice, as it does a healthy one. You just need the tools and resources to know how to do it!
