Officially Spring
Hi friends! I am coming to you with mixed emotions today. On one hand I was very excited about the first day of spring to be here. It’s my favorite day of the whole year. I’ve written a few posts about how much I love spring time and gardening, you can check those out here. But the reason for the mixed emotions, is that we had a crazy mishap with our above ground pool yesterday, and it FLOODED my entire garden. Took it out. There are a few remaining survivors but for the most part, my completely planted and ready to go garden, is no more. 😫 It will take a bit to rebuild, which I am okay with, because our garden is so worth it! In the meantime, here’s a few pictures of some of my plants that are making me happy & bringing some color to our yard.
spring salads
With spring & summer approaching, I always get in the mood for some delicious salads! A salad to me is so versatile. It can be light or hearty, packed full of healthy fats and protein, or loaded up with protein and carbs. (Notice I said protein both times? Don’t skip the protein!!! :)) Whichever your fancy! I just spent some time updating my salad & salad dressing Pinterest board, to prepare for some easy lunch and dinner ideas in the coming weeks. on the menu this week
This week, we are keeping it budget friendly, using items we have on hand in the freezer, plus repurposing dinner from one night – to use for a second night’s meal! (Read — easy peasy.)
Monday: pecan crusted chicken, salad, and baked fries *this recipe is from one of my fave food bloggers Paleo Running Momma, and is perfect for a low carb night! Omit the fries if you are keeping it low carb. Keep the fries if you want to keep the kids and hubby happy! 😀 (recipe)
Tuesday: street tacos, rice, and beans * I’ll be using ground venison as the base of meat for our tacos. I’ll use regular corn tortillas lightly softened and warmed in olive oil, we like ours a little crispy! Spanish rice recipe can be found here, and beans will just be canned refried! I love Rosarita brand.
Wednesday: sweet potato nachos *I’ll use all of the fixings that we have leftover from taco night, and repurpose them to top some sliced and baked sweet potatoes. Nachos with a twist! Keep it kid friendly and serve their’s over regular tortilla chips, or see if they want the sweet potatoes! They may surprise you. 🙂
Thursday: breakfast for dinner! A family favorite. I love to use King Arthur GF pancake mix to make waffles, and then serve with some eggs and bacon for a macro friendly meal!
Friday: Paleo Pizza Casserole — another one from Paleo Running Momma! The hubs and I are actually going on a date night, but I wanted to provide a fun meal to end the week with, and bookmark for myself for another night! 🙂 (recipe)
