Lemon Dill Chickpea Salad

A simple, light, and refreshing summer salad.

Ingredients
  

  • 1 cup canned chickpeas
  • 1/4 cup crumbled goat cheese
  • 1 pickling cucumber
  • pinch fresh dill
  • dash olive oil
  • dash lemon juice
  • salt + lemon pepper to taste

Instructions
 

  • Combine all ingredients into a bowl, mix, and enjoy!

on the menu this week

I’m down to one kid at home this week while the rest are on a trip with their grandparents. So cooking will be light and easy for us!

Monday: BBQ chicken salad * a simple leftover meal! I’ll be reusing bbq chicken breast, add the chicken, celery, apples, pecans, and mayo in a food processor and mix all up! Served on lettuce wraps for me, and buns for the fam.

Tuesday: sausage & zucchini sheet pan *another easy dinner! Arrange sliced sausage and zucchini on a sheet pan. Spray veggies with olive oil and season with herb salt + pepper. Bake at 350 for 20ish minutes!

Wednesday: a good old fashioned spaghetti and salad. I use GF pasta & a sauce that has no sugar! (Favorites are Prego Farmer’s Market & Ancient Harvest spaghetti.

Thursday: chalupas & pinto beans *I’ll cook ground venison for the meat and use Siete taco seasoning. For the tortillas I’ll bake Siete tortillas in the air fryer oven to get good and crispy!

Friday: Kevin’s chicken paired with jasmine rice! (Check out Kevin’s products here.) I usually get mine at Costco or HEB. They are SO delicious and easy for a quick dinner.
