Ingredients
  

  • 3 medium-sized green tomatoes freshly picked and sliced
  • A few tablespoons of ghee for frying
  • 2 eggs
  • A splash of milk use a dairy-free alternative if necessary
  • 1/2 cup gluten-free breadcrumbs
  • 1/2 cup gluten-free flour
  • 1/2 cup grated Parmesan cheese or dairy-free alternative
  • Salt and pepper to taste
  • 1 tsp dried dill adjust according to taste
  • Fresh lemon juice optional, for serving

Instructions
 

Prepare the Frying Pan:

  • Heat a frying pan over medium heat and add a few tablespoons of ghee.

Breading:

  • In one bowl, create an egg wash by whisking together the eggs and milk.
  • In another bowl, mix the gluten-free breadcrumbs, gluten-free flour, Parmesan cheese, salt, pepper, and dried dill.

Fry the Tomatoes:

  • Dip each tomato slice first in the egg wash, then coat thoroughly in the breadcrumb mixture.
  • Arrange the breaded tomato slices in the frying pan. Cook until each side is crispy and golden brown, flipping once.
  • Transfer the cooked tomatoes to a plate. Optionally, add a squeeze of fresh lemon juice and a sprinkle of salt over the hot tomatoes.
