Sloppy Joe Stuffed Sweet Potatoes
Hi friends!! It’s been quite the week. My family has each taken turns with the flu, and while I am feeling stronger, I am still not 100%. I am looking forward to this Monday as a fresh start, and ready to get back into my routines of healthy eating + exercise! My meal plan for this week is revolving around using what we have in the freezer (meats + veggies)! Monday: pork chops, mini potatoes, broccoli (an easy meal to throw in the oven and roast! no recipe here, just season with salt, pepper, garlic, and fresh herbs of choice.)
Tuesday: beef tips, rice, and green beans. I am using venison tenderloin for my “beef”, and jasmine rice for my rice. This is a family recipe that I will share soon here on the blog, but for now, this recipe is similar!
Wednesday: chick fil a style nuggets, sweet potato fries, and salad. *nugget recipe
Thursday: axis + chicken kabobs (super simple here! Just slice up meat, peppers, and onions, spray with olive oil, season, and grill!) I am SOOO ready for bbq weather!
Friday: sloppy Joe stuffed sweet potatoes. My son LOVES sloppy joes! This is my recipe to make an extremely healthy version, stuff into a sweet potato to get those good carbs!
