Step By Step Cooking Series: Egg Roll In A Bowl

Today I wanted to share with you a fun video that I made while cooking last night. If you follow along on IG or FB, you may have seen me posting these recipe tutorials lately. I have such an obsession with watching recipe videos, and cooking shows, and it’s a small dream of mine to live out that obsession making my own videos.

Last night’s dinner was Egg Roll In A Bowl, adapted from the recipe from 40 Aprons. If you haven’t tried making any of her recipes yet, I encourage you to RUN to her website right now. Everything I have made from her site is not very complicated, easy to make, HEALTHY, and DELICIOUS.

I get asked LOTS of questions on whether or not my kids actually eat this dish.
The answer is YES. They scarf it down. I will let you in on a little secret on how I introduce foods to them, that don’t resemble chicken nuggets, mac n cheese, or grilled cheese & fries.

There. I said it. Don’t. Make. A. Big. Deal.
If you treat a food as “too adult” or say something like “well that’s a nice recipe but what will the kids eat?” You are automatically setting them up for failure. You are EXPECTING them to shove it away. Expecting them to not like it. So what happens? Chances are they are going to follow your cue and deny it before even tasting one bite.

Before you get your defenses up, let me put your guard down. My kids sometimes don’t like what I put in front of them. My daughter LOVES her some chicken strips and french fries from Whataburger. They do not ALWAYS choose the healthiest option. But does that stop me from trying? Absolutely not.

I will admit, I have been guilty of those thoughts. “I wonder if the kids will like this.” Or, even thinking, “I don’t think they will EVER eat that.” But I have made a solid effort to REIN those thoughts in, and set the plate in front of them anyways. And you know what? They surprise me, almost every time.

Wondering where to start? Try a little bit at a time. I try to incorporate the healthier options that I am choosing for myself, while also fixing something maybe as a side, that I KNOW they like. For example last night, I know my kids love egg rolls and plain steamed rice. I made sure to serve those sides, alongside the egg roll in a bowl. I ask that they take at least one bite of something that may be “new” or “foreign” before they can tell me that they like/don’t like something.

I am not a parenting expert. I am not a food expert. But I did feel the need to share some of my tips and own experience to hopefully help inspire you to NOT give up on the quest for giving your kids healthy options. Their taste buds can change, they DO grow up, and they CAN surprise you.

Cheyenne went through a stage where she LITERALLY threw a green bean at me, and said “YUCK, I NOT EAT THIS.”
But last night, she shoveled down broccoli, kale, and cabbage, with siriacha mayo. #whoknows
