RV Kitchen Organization

HI friends! I shared a poll on my stories a few weeks ago about whether or not you would like to see more RV content on the blog & social and it was a 100% unanimous YES. Which honestly makes me excited because I love to share stuff like this! First up, the most important part (in my opinion) of the RV life – and that’s stocking the RV kitchen!! 🥰 I am obsessed with the Pioneer Woman, so naturally, there was no other choice for the kitchen. on the menu this week

MACRO friendly RV dinners on the go! In the spirit of sharing RV related content – this week’s dinner menu will be one that you can cook completely on the go! We have a Blackstone grill that we bring with us on our RV trips, and it’s been so versatile to use.

Monday: Chicken Fajitas *I can’t think of a better meal to grill up at the campsite! Perfect for low carb day if you want to skip the tortillas and pair with a microwaveable bag of cauliflower rice. Load up with grilled veggies, guac, and pico. Reg macro day, use microwaveable brown rice, and grab some corn or cassava flour tortillas!

Tuesday: Burgers *Another great meal that you can make work for any type of macros! Skip the bun and serve over lettuce with plenty of bacon, guac, and mayo for a low carb day. On a regular carb day, grab a GF bun, and eat with sweet potato fries! (You can throw frozen fries on your griddle!)

Wednesday: Chicken & Veggie Foil Packs * This is another great outdoor meal. Dice chicken breast for quicker and easier cooking on the grill. Spray your favorite veggies with olive oil, we love squash, zucchini, onions, and mini potatoes. Season everything with garlic and herb salt & pepper, then grill until chicken reaches 165 internal temp. Make this your own – you can sub out any of your fave proteins, pork, salmon, beef, etc!

Thursday: Campfire Chili & Cornbread *Break out the dutch oven, things are about to get real here in the camp! Chili and cornbread is a classic and delicious meal to let simmer while you spend time around the campfire. Check out this delicious recipe!

Friday: Sausage + Tortellini + Spinach Casserole *I’m going to use the term “casserole” loosely here. Because this meal is not cooked in a baking dish in an oven. It’s grilled on the Blackstone! Yes even the tortellini! I would pair this with a jar of your fave marinara for a delicious family friendly meal. (recipe) Also note, that there are gluten free tortellini options out there if you have an allergy like me!
