Easy Summer Dinners
Y’all summer so close we can almost taste it! This weekend we took a trip to Canyon Lake, and enjoyed some sun and the beautiful water. I grew up about 10 minutes from the lake, and my parents still live out there. To see my kids going out there making memories on the same lake that I did, is so much fun. When you’re out on the lake, pool, or chilling in the backyard, you hardly want to come inside and cook a big dinner, am I right? That’s why I am excited to start sharing some super EASY summer dinners to make for your family. Continue reading for this week’s list of easy dinners. on the menu this week
Monday: hawaiian chicken rice bowls *I shared this recipe a while back, and decided I definitely needed to include it on my summer easy list! Just a few ingredients needed and minimal cook time. I love using Primal Kitchen hawaiian sauce for the delicious flavor. You could also throw some chicken in a crockpot with some of this sauce simmering with it. Serve on slider buns for the kids! Tuesday: garlic steak & potato foil packs *anything I can throw in some foil on the grill is a great option. Pair with a salad or some grilled zucchini for some greens. (recipe)
Wednesday: Mexican street corn chicken *I found this recipe on Pinterest and can’t wait to make it. One pan magic – mix it all up and throw in oven. If you don’t want to heat up your whole kitchen – use the air fryer oven! (recipe)
Thursday: shrimp stir fry *shrimp is one of those QUICK proteins I love to have on hand for an easy dinner. I buy the frozen ones already peeled and deveined. Sauté in some garlic butter for a couple minutes and pair with a frozen pack of stir fry veggies. Use coconut aminos for a soy sauce and boom. Dinner is done! If you need some carbs, microwave a pack of rice. Can’t get easier!
Friday: grilled pizzas *IF you have been around here a while you know I love to grill on Friday’s! Pizzas are a simple dinner. Buy a frozen one for the quickest option, use premade crusts (I like Banza & Udis), or make your own crust if you’re feeling extra. (I love Bob’s Red Mill GF pizza crust mix.) Use a good pizza stone out on the grill, or place on foil! I like this stone here.
