Ingredients

sweet banana peppers
chopped

medium onion

cherry tomatoes

corn
fresh or frozen

smoked paprika

cumin
Salt and pepper
to taste
Olive oil
Optional garnishes: chopped fresh cilantro
avocado slices, lime wedges, and a dollop of Greek yogurt or your favorite sauce
Instructions
Heat a large skillet over medium heat. Add a drizzle of olive oil, then the ground turkey. Cook until browned, breaking it into crumbles as it cooks.
To the skillet with the browned turkey, add the chopped vegetables and cook to desired tenderness.
Season with smoked paprika, cumin, salt, and pepper. Adjust the seasonings to taste.
Serve the turkey and vegetable mixture hot over a bed of cooked quinoa, rice, or any grain of your choice (microwave packs are a convenient option).
Garnish with chopped cilantro, avocado slices, a wedge of lime, and a dollop of Greek yogurt or a drizzle of your favorite sauce if desired.
