1jar cashew queso*You can also use regular shredded cheese
pico, guac, and sour cream for garnishes
Instructions
Bake your chicken breasts in a 400 oven until internal temp reads 165. Shred and mix with your packet of taco seasoning. Set aside.
Prepare your sheet pan by spraying with a non stick cooking oil, and then layering 7 tortillas across the bottom, overlapping each other. (You will save one tortilla for the center top layer.)
Spread a thin layer of queso or shredded cheese on top of tortillas. Add shredded chicken, then another layer of cheese.
Fold tortillas over and add your last tortilla to seal all ingredients inside.
Place a second sheet pan on top of the quesadillas and press down firmly.
Bake for 20 minutes in a 425 oven. (Remove the top sheet pan for the last 5 minutes so the tortillas can get nice and crispy.)
Allow to cool for a few minutes, then slice and serve!
