Instructions
In a small sauce pan, combine apple cider vinegar, water, sea salt, and sugar. Simmer until the salt and sugar dissolve.
Thinly slice the red onion.
Place the sliced onions and optional garlic cloves in a pint mason jar or container. (Use a quart jar if doubling the recipe)
Pour the pickling liquid over the onions, ensuring they are fully submerged.
Let the onions marinate for at least 30 minutes. For optimal flavor, refrigerate them overnight.
