I feel so bad—these little carrots were just sta I feel so bad—these little carrots were just starting to grow so well, and then I come along and yank them out. 🥕💔 • But thinning seedlings is one of those tough-love gardening tasks that makes all the difference, especially for root veggies like carrots! • Overcrowded carrots compete for nutrients, water, and sunlight, which means smaller, misshapen roots. Thinning gives the strongest ones room to grow big and straight! • ✨ TIPS FOR THINNING CARROTS: •Thin when they’re about 2 inches tall. •Snip at the soil line if you want to avoid disturbing the rest. •Leave 2 inches between plants (or follow your seed packet for variety-specific spacing). • It might feel harsh, but trust me, your harvest will thank you! 🌱 Have you thinned seedlings before? FALL HARVEST TO TABLE SERIES EP. 5: Crispy Radish FALL HARVEST TO TABLE SERIES EP. 5: Crispy Radish + Apple Slaw 🌿🍎 • Crisp, fresh, and full of seasonal flavor—this slaw is everything I love about fall ingredients in one bowl. Sweet, tangy apples meet peppery radishes and crunchy cabbage, all tied together with a simple lime and honey dressing. It’s light, refreshing, and the perfect side dish for your fall table! • Here’s how to make it: Thinly slice 6-8 radishes, julienne or thinly slice 1 apple, and shred 2 cups of cabbage. Toss them together with a handful of chopped fresh cilantro. In a small bowl, whisk 1 tablespoon lime juice, 1 tablespoon honey or maple syrup, and 1 tablespoon olive oil. Season with salt and pepper. Add thinly sliced jalapeño if you like a little heat, then pour the dressing over the slaw and toss to coat. Papa served for 8 years in the Air Force, and we are grateful to him and ALL veterans who serve this country selflessly so that we can have our freedom. • It makes me proud to see the kids sing and celebrate our military, and listening to them sing God Bless the USA gets me. FALL HARVEST TO TABLE SERIES EP. 4: Roasted Parsni FALL HARVEST TO TABLE SERIES EP. 4: Roasted Parsnip + Garlic Soup 🥣 This cozy, dairy-free soup is packed with fiber and antioxidants—perfect for fall. • Never had a parsnip before? Think of it like a pale carrot with a slightly sweet, nutty flavor—a cross between a carrot and potato! • Here’s the recipe: ✨ Ingredients: • 3-4 large parsnips, peeled and chopped • 4 garlic cloves, peeled • 1 small onion, diced • 1 tbsp cooking oil • 1 tsp fresh thyme (or 1/2 tsp dried) • 4 cups veggie or chicken broth • 1 can full-fat coconut milk • Salt and pepper to taste • Fresh parsley or chives for garnish ✨ Directions: 1. Preheat oven to 400°F. Toss parsnips and garlic with oil, salt, pepper, and thyme. Roast 25-30 min, until tender. 2. Sauté onion in a large pot until softened. Add roasted parsnips, garlic, and broth, then simmer. 3. Blend until smooth (add coconut milk if you like).
