Sprouts + Costco Faves
Hi y’all! Back again with this week’s dinner plan! I got to go on a Costco run this past week AND a trip to Sprouts. Like hitting the grocery store jack pots! (Adulting at it’s finest, am I right?) Continue reading for my weekly dinner ideas, recipes, and tips for making the meals work for a family! on the menu this week
Monday: Sausage, butternut squash, & brussel sprout sheet pan *I’ll also be roasting some mini potatoes for my kids because they love them! Since it’s a low carb day for me, I’ll pass on those and load up on the veggies & sausage! (no recipe just put all items on sheet tray spray with olive oil, season to your taste, and roast for 20-30 mins at 350.)
Tuesday: Ribs, dill pickle salad, & baked beans. *Beans typically are a great option for a higher carb day however, you can make it work on a low carb day by pre-planning! They have great fiber content also so that’s a plus! (recipe for ribs)
Wednesday: Buffalo chicken pizzas + salad *I’ll be using Banza gluten free pizza crusts which have a great protein and carb ratio. I will make mine with dairy free mozzarella, Primal buffalo sauce, and Tessemaes dairy free ranch. (recipe) *I will make a regular cheese pizza for the kids, since they are not a big buffalo fan!
Thursday: Enchiladas + Spanish rice (I’ll be using a dairy free cheese, Siete brand enchilada sauce, and regular white corn tortillas.) I’m following a recipe from The Pioneer Woman’s Super Easy cookbook!) *no adjustments needed for the fam, who doesn’t love enchiladas?!
Friday: Belgian waffles, berries, & bacon. My family LOVES breakfast for dinner. Plus, after a busy week, an easy no brainer meal is always a great idea. I LOVE the King Arthur GF pancake mix for the waffles. Link to my fave waffle maker here as well!
