Healthy Cinco De Mayo Recipes
Hola friends! Happy Cinco De Mayo! Do you observe this holiday or celebrate in any particular way? I live just outside San Antonio, TX so Mexican culture (and Mexican restaurants) are abundant in our area. My Grandma’s heritage comes from Spain, so needless to say, this food is a staple in our family. I get asked from my clients for healthy options at Mexican restaurants all the time, so I thought it would be a fun time to put together a collection of my favorite healthy Cinco de Mayo recipes & foods. Continue reading for my tips for eating out, tips for cooking at home, my fave skinny Marg recipe, and my Grandma’s Spanish rice recipe!
Eating Out On Cinco De Mayo
If you are planning to hit your fave Mexican restaurant for Cinco De Mayo, here’s some options for ordering.
Regular Macro Day:
Chicken or beef fajitas with rice, beans, corn tortillas
Tortilla soup with corn tortilla toppings
Taco salad with salsa for dressing (skip the taco shell)
Pollo Monterrey with rice & beans
Chile Relleno with rice & beans
Tamales with rice & beans
Tips for regular macro day:
Depending on your carbs for the day, don’t be afraid to order the rice and beans! Your body needs carbs! 🙂 Watch your guac, sour cream, and cheese, as these will run up the fats quickly.
Low Carb Day:
Chicken or beef fajitas (skip the rice/beans – opt for grilled veggies on side)
Tortilla or chicken soup (skip the tortilla topping)
Taco salad
Pollo Monterrey with grilled veggies
Carne Asada
Tips for low carb day:
Swap out rice, beans, tortillas, for grilled veggies. LOAD UP ON THE GUAC BABY! Seriously, if there was anytime for you to enjoy all the avocado, it’s on a low carb day!
It’s all about the queso & margs
If you want to enjoy a marg on Cinco De Mayo – order a Skinny Margarita! (On the rocks, not frozen.) Frozen margs typically have a premade mix that is loaded with sugar. A skinny marg is usually a very basic recipe with minimal ingredients/added sugars.
If you are going to buy a margarita mix, check out Tres Agaves, their ingredients are SO simple, and it’s the only mix I will drink now. Make your own skinny marg at home with some very simple ingredients! (Save the recipe below.)

Where all my homebody’s at?! I am raising my hand with you. Cooking dinner for my family, and hanging out at home is one of my fave past times. I will probably be grilling up some chicken fajitas today, and of course mixing up some margs.

When cooking at home, you’ve gotta have some good ingredients on hand right? I’ve shared here before and on social, how much I enjoy Siete brand foods. Grandma’s Spanish Rice
My grandma taught me how to cook rice when I was in Elementary school. Rice & tortillas were probably the first things I ever learned how to make in the kitchen. I’ve been making her rice since then, and it’s been one of my family faves. Save the image below for the recipe.
